Recipe: Salad in a Pocket PDF Print

Salad in a Pocket is a fast, easy, and nutritious lunch.

Ingredients

1 large whole wheat pita bread (round)

2 oz sliced cooked turkey breast 

½ of a small tomato

¾ cup package torn iceberg lettuce mix or Caesar salad mix

2 tablespoon s of bottled reduced-calorie ranch salad dressing

 

Directions

1)      Put the pita round in the half cross-wise. Using your fingers carefully split open split open each half to form a pocket (be careful not to break it into 2 pieces) save pita for step 3.

2)      Put the turkey on the cutting board. Use the sharp knife to cut the turkey into bite-size pieces. Put the turkey into in a medium bowl. Put the tomato on the cutting board. Use the sharp knife to cut the tomato into small pieces. Add tomato pieces to the bowl of turkey. Add lettuce and salad dressing to the bowl of turkey and tomatoes.  Stir well with a wooden spoon.

3)      Spoon mixture into each pita pocket. Serve right away.
