Pilaf Rice

2 c. Long Grain white Rice

4 c. Chicken Broth

4 Tbsp Butter/Margarine

1 c. Chopped Onion

½ c. Chopped Red Peppers

½ tsp. Thyme

½ tsp. Minced Garlic

Directions

1.      1. Heat 2 Tbsp of butter in saucepan and sauté onions, peppers, and garlic until soft; remove from pot

2.      2. In the same pot heat 2Tbsp of butter and brown the rice, stir often

3.      3. Add onion, peppers, thyme,  and garlic to rice and sauté for about two minutes

4.      4. Add the broth to the rice mixture and bring it to boil

5.      5. Reduce heat and cover, simmer until rice is tender and all liquid is absorbed
